Potassium Bromate berbahaya karena Karcinogenik (bisa menimbulkan sel-sel kanker) .Calcium Propianate dipakai pada roti supaya roti kelihatan-nya putih seperti kapas dan supaya roti awet tidak tumbuh jamur. Dan gawat-nya di Indonesia, menurut percakapan yg saya dapatkan dari orang yang pakar di bidang roti di Indonesia, banyak produsen roti menaruh calcium propionate dalam kadar yang super-super tinggi (semau-mau-nya) , supaya roti-nya lebih awet, putih dan tidak mudah ber-jamur (bulukan), dan dengan alasan harga, ada juga sebagian dari produsen roti yg memakai calcium propionate yang bukan untuk makanan (food-grade) .Calcium propionate pada anak bisa menyebabkan penyakit ADD (Attention-deficit hyperactivity disorder atau Attention-deficit hyperactivity disorder (ADHD or AD/HD). Penyakit ini membuat seseorang selalu hiper aktif dan tidak bisa ber-konsentrasi
